Hawaiian Cookie Bar - 52 Church PotLuck Dishes and Sunday School Snacks

It's Children's Church Sunday School Snack day again!

My wife made the commitment for us to provide snacks for our little children's church each Sunday.  Easy enough and kind of fun to come up with something a little different each week.

BUT... This week I had a small wedding to cater and serve the night before.  I spent all Saturday cooking and prepping the wedding so I needed something quick and easy to make for the kiddies.

And nothing gets easier than a bar cookie.

This one has a little of everything... especially a few everything Hawaiian ingredients...

Coconut, Macadamia Nuts,
Just a little healthy with oatmeal replacing a lot of the flour.

And you have to have a little whimsy (M&M's)!

Just a few minutes of hands on work and a delicious fun snack for the little urchins!

OK... Here's what I did...


Hawaiian Cookie Bar


Ingredients
  • 3/4 Cup (1-1/2 Sticks Butter, softened to room temperature
  • 3/4 Cup Sugar
  • 3/4 Cup Brown Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla
  • 2 Cups Old fashioned Oats
  • 1-1/2 Cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 Cups M & M's (I used Pretzel M&Ms
  • 1 Cup Sweetened shredded Coconut
  • 1 Cup Coarsely chopped Macadamia Nuts
Cooking Directions
  1. Preheat oven to 350 degrees. Line a 9X13 Casserole pan with Parchment paper or spray liberally with non-stick spray.
  2. Cream butter sugars until light and fluffy.
  3. Add eggs and vanilla until creamy.
  4. In a clean bowl, whisk together the flour, baking powder and baking soda, Blend this mix into cream mixture.
  5. Add remaining ingredients and fold until evenly dispersed.
  6. Spread mix evenly on the bottom of the prepared pan.
  7. Bake in 350 preheated oven for 20 minutes, until center is set (no jiggle when shook).
  8. Cool completely before slicing.
  9. Serve room temperature and ENJOY!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy
